Sometimes it is so hard to come up with new dinner ideas, I thought it would be fun to share what we are making with each other. And we can share our recipes and tips, etc!
I am making meatloaf, but it has chopped mushrooms, garlic, onions and celery in it (instead of the same old); baby peas; and rice.

Thanks!! I forgot I put some eggs on to boil! OOPS! I read your post and thought about dinner and then remembered the eggs. I'm making some deviled eggs today. I think i'm having hot hamburgers tonight.

I was going to do hamburgers ~ but I ran out of propane and was too lazy to get it filled today!

I'm not grilling mine. I'm serving what we call hot hamburgers. I cook them on my hamilton (Forman) put them on bread cut in half and put a scoop of mashed potatoes and cover in brown gravy.Another big hit is hot tenderloin served the same way.

Stouffer's Skillets, beef, roasted potatoes and veggies.
Hubby's out of town so it'll just be me and my son. I never tried this before since it only serves 2, I thought I'd pick it up. Hope it's good.

Ok, I made the Sweet and Sour Pork and it was sooo good, I will make this again, next time I will try it with chicken, I also made Jasmine Rice, my favorite rice! and a Salad....:) It was easy to make, just prep everything before hand and then it goes fast.

I checked out the recipe it sounds wonderful! This is pretty close to how i've always made it. sauteing the veggis in salt and sugar sounds good.I will try that next time.Thanks for the recipe!!

i MAKE A GREAT MEATLOAF JUST ADD LIPTON ONION SOUP MIX TO THE MEAT ALONG WITH SOME WATER AND BREADCRUMBS.......TOP WITH CATSUP AND BAKE.........MY HUBBY LOVES IT....... ALSO ANOTHER QUICK MEAL IS MAC AND CHEESE AND FRESH FISH CAKES.....QUICK AND EASY

We will be having barbecued boneless country style pork ribs, baked potatoes and steamed broccoli. Somehow I ended up with 2 little boys who love broccoli...too bad the hubby hates it though!!!

I ended up with a hubby that doesn't really like baked potatoes LOL, however I still make them and he eats them...he says I do make the best baked potatoes. Wash, poke with a fork and bake at 350 for an hour...ya, I'm good!:)

I like to slice mine almost all the way through - like a fan...sprinkle with salt pepper and garlic and then brush them with butter.......yummy!!

LOL - you guys are cracking me up!! Ribs do sound really good...........and although my guests thought they were awesome (the last time I made them) hubby wasn't so keen ~ he is such a meat and potatoes person!!! Although tonights chicken went over pretty well!!
Our guys are so spoiled!!!

Well the best of plans sometimes get pushed to the back burner....a friend of mine suggested we go to dinner at a great Thai restaurant, HELLO! I am not one to say no thanks I will stay home and cook, besides there was just enough of last nights dinner, the sweet and sour pork and rice that HD said go eat and I will have leftovers............so everything worked out great, I had Curry Chicken that was to die for!!! and brought home the leftovers from that dinner!!!

Oh if you like spicy you would love this place we eat at, the name in Pongs, and that is her real name, I asked her today if she was going to go on vacation and she said everyday is a vacation! She works 6 days a week, never goes anywhere, and is in her late 60's, of course you would never know she is this old, she looks 40! and stands about 5 foot tall....this is a person who truly loves what she does, and we all love her, we have been going to her restaurant for the past 21 years. So hop a jet, and I will take you there....lol

Chris, going out to eat everyday is a real treat I bet! glad you are enjoying your sister while she is there.....your dinner tonight sounds delish too! I love Pork Tenderloin.

It'll just be me and my 2 boys tonight so we're just doing pizza. My school aged son has off tomorrow for Labor Day so we'll be "camping out" in our living room tonight after pizza to watch movies and eat snacks all night until they fall asleep.

Chicken Enchiladas with roasted Poblano Peppers that I roasted and peeled yesterday, same peppers they use to make Chili Rellenos with......I love them in enchiladas, they add alot of flavor.
Homemade Spanish Rice, and Refried Beans

Tonight it is leftovers, the Chicken Enchiladas were so good last night, and will be better tonight, along with the rice and beans....I could eat Mexican food everyday!

Carol when you reheat your enchiladas do you just reheat them in the microwave? I'm not a big fan of mexican food but have cooked it alot through the years.
When I worked at the college we served them the first night as enchiladas then the next day after we reheated them ( in a steam oven) they never looked as good so I would take a spatula and rub over the pan so it sorta blended it.Then I topped it with fresh shredded lettuce diced tomatoes a few black olives and sprinkled with cheddar cheese.I then called it enchilada casserole.Everyone loved it!

No, I reheat them in the oven (350) for about 45-50 minutes, the tops get nice and crispy from reheating in the oven...really good.

I have to share this- I made pecan crusted Pork Steaks- Garlic buttered steamed Red Potatoes- And golden corn w/ red onins for dinner last night.
The pork steaks are sooo yummy- I mix together dijon mustard and mayo(thanks to BZzAgent and Grey poupon) the hearty spicy one- EVOO- salt and pepper- coat the steaks
In a mixer/chopper I chop up pecans, slice of bread, salt, pepper, and parsley.
coat the steaks with crumb mixture and bake for 20-25 mins!!
My family absolutely loves these!!
I used my Ziplock steam bags for the potatoes and melted butter and fresh garlic to pour over them when they were done.
My corn is frozen corn and I add red onion which makes the corn taste so sweet. My kids always have 2nds and 3rds of their veggies!!
Just wanted to share my dinner!!

I made lasagna tonight. I also steamed some potatoes in a Ziploc steamer bag with some olive oil, garlic, paprika, salt, and pepper. Very yummy!

We had Grandma-Grandpa chicken w/mac & cheese. Before anyone asks, I use boneless/skinless chicken thighs in Oven Fry coating mix. The first time my girls had this was at...you guessed it...Grandma & Grandpa's house, the name just kind of stuck, even my husband calls it that now.

They were delish! My husband said, boy are these moist, you have to make these again..........lol he and I both really enjoyed them! I will be making them again, they were so easy to do, I just had to bake them longer because of the altitude here, almost 7,000ft. we had mashed potatoes, gravy, corn and salad with them..........perfect meal!!! WTG!!! Ok whats next? :)

Alright!!! Go Me!!:p Well another thing I do is make these without the Pecan Crumbs- I just use the mustard sauce on them and cook as is!! Still very moist and the mustard flavor comes out so much more.

You can also do like I make ribs...........rub the pork steaks with mustard then rub in brown sugar....more the merrier....rub it in good until it makes a nice thick syrupy consistancy.....bake them and then when almost done, add a sweet and sour sauce, it can be a bottled marinade, sweet and sour sauce, or a honey type bbq sause..........yummy

I love to cook also, I too make the whole Thanksgiving meal, have been for many years....there are certain food items that have to be on that table year after year....it's tradition, my son loves for me to cook, his wife is not a very good cook, she has improved greatly since they have been married, but the only way you learn is by doing...and like I have told her, a recipe is only a guide, be creative and don't be afraid to add or delete ingredients, this is how you learn............exception is baking, follow the instructions..........something that does not interest me very much.....probably a good thing, lol
I think we will have to start a thread for recipes for the holidays, what do you think? I have a couple to share....

Okay ladies, I's need some help.
I have never been much of a meat eater, but in the past few years, I've had to start cooking more meat because it turns out that in addition to my hubby, my kids are big carnivores. I am embarrassed to tell you this, but I had never heard of pork steaks until I read this thread. :o :o :o
I looked at Sam's yesterday, and found some, but they had bones. Is that typical? I'm willing to try them with the bones, but I'd prefer them without. Do they have lots of fat and gristle in them? That stuff kinda skeeves me out.
I am SO looking forward to Thanksgiving this year. I haven't had a real Thanksgiving with lots of family around for years. This year, my sis and her family are coming in, and we are having Thanksgiving at her mother-in-law's new house (if we can get it ready in time--we've been working hard!) with our family and John's family. John's mom is an awesome cook! I have never met anyone who can even come close to cooking like that woman does. Now, it's all full-fat, all-butter, calories, etc. But, who wants to be on a diet all of the time? Not me!
Carol, I think it's a wonderful idea to start a holiday recipe thread. I say, go for it! :)

Pork Steaks are just slices from the Pork Butt ...........the best roast you will make because it has alot of fat running through it...yes the Pork Steaks will have alot of fat running through them, but they will be very tender and you can cut the fat off after you make them....not a problem, just be sure not to overcook them...you will have tough meat with a rubber band effect, lol from the fat..

Bone-in is fine- or without- depends on how your grocer sells them. I have found that steaks over chops are much juicier and tender and have tons more flavor. The fat helps with the cooking. I haven't really come across any grissle- but this can always be trimmed off.

They are usually sold with the bone in, atleast in my grocery store that is how they come, usually 99 cents a pound on sale.....want a great meal? try this, get a pork butt from the grocery store, atleast 3-4 pounds, place on a foil covered shallow roaster pan, season with garlic salt and pepper, add some rosemary if you wish ( I love it, as much as you want!) roast at 275 for 6 hours uncovered, this will melt in your mouth it is so good! I promise you will love this if you like pork..........and it great for making tacos the next day with the leftovers.....try it please!

If they are over 1/2 inch thick why not make stuffed chops? yummy! make a slice into the chop to form a pocket, make stuffing from scratch or box, your choice...stuff them season the chops with garlic salt and pepper, brown them on both sides, then cook in 350 degree preheated oven, if you do not have an oven proof frying pan then move them to an oven proof shallow pan and roast them for 45-60 minutes depending on your oven.....

Chris, I cheated too, with the Pizza Dough, I bought it at Trader Joe's last weekend when I went with my daughter in law...........it is the best dough for 99 cents.........the pizza was terrific too! have to admit it made a good midnight snack also, yum

Chris, here is a recipe for Pizza Dough that comes from the California Pizza Kitchens Cookbook, I have never made it, but thought you could compare this with the other recipes you use for the bread machine
Pizza Dough
------------
1 Teas Yeast (1 package)
1/2 cup + 1 Tablespoon warm water (105-110 degrees)
1 1/2 Cups Bread Flour or All Purpose Flour
2 Teas sugar
1 teas salt
1 T. EVOO + 1 Teas for coating
Dissolve the yeast in the water and set aside for 5-10 minutes
then add ingredients in order for your bread machine.

Out. We went out for a bite of supper. I worked all morning, did laundry all afternoon. DH did yard work & got our pellet stove all ready to start up at the slightest hint of a cold spell. Went to a local family restaurant & had a nice supper served to us for under $20! Why cook?!

I have and it comes out sooo good, just place the meat on a large peice of foil add 1/2 cup water and seasoning packet if it is seperate, seal well, bake for 3-4 hours, let rest for 10 minutes, slice and enjoy! You won't believe the texture of the meat compared to boiling in water....OK now I know I am going to have to make one soon!

Glad you asked, yes, I do add onion slices on top and if you want, something else I do, orange slices too right on top of the onion slices.....you seal the meat in the foil and 1/2 cup water, so no steam escapes, it will not brown, you don't want this meat to brown it will turn tough......and I add no other seasoning as this meat is already salty and has pickling spices already on the meat or is a seperate packet.....if in a packet, sprinkle it over the meat first then the other items......when they go on sale, usually in March I buy atleast 3, sometimes more...and I always try and buy the flat cut as it is not fatty like the other cuts of corned beef.......try it once and see if you like it better than boiling..........it's yummy!!

Upside-down Tacos
In a bowl (or in each bowl) put a layer of Fritos
Top with Chili (sometimes we add extra ground beef)
Sprinkle with cheddar cheese (I like lots on mine!)
We do this sometimes for fun, and sometimes when I am simply too tired to cook! It is REALLY quick

Let the ice cream get soft and add about 1/2 cup of the pp mix. keep adding until it is the flavor you like. Then put it back in the freezer. YUM YUM.:) :p

I am not sure brittle is best to describe the bottom layer- it is more along the lines of toffee- tastes just like it- also I have made it and used peanut butter chips on half and chocolate on other- the peanut butter side was sooo creamy!! very good.
It sounds like they may taste exactly alike! :D

Every time my sister comes home, she HAS to have Taco Bueno! They are extremely reasonably priced too. One day, when we were working on the house, my sis and I went there and brought back lunch for everyone. We got food for eight people and only spent $25 and some change.
Don't ya just love leftovers? I adore leftovers. Last night, I made two quiches, that way I have dinner for tonight taken care of as well. My family loves quiche so much, they would never complain about having it twice in a row!
What does your quiche have in it? I said Quiche Lorraine, but I've changed the recipe so much, I can't really call it that. I use skim milk instead of cream, and turkey bacon instead of regular bacon. I also use mozarella cheese instead of Swiss. I've just lightened it up quite a bit.

We love Quiche here too, and since it is just the 2 of we have it the next day also, I think it tastes better the next day, all the flavors meld together...yummy!

I saw this place on the food network channel. The cupcakes look really good and sell for like 3.50 or so.The show claims people stand in line 2-3 hrs for a cupcake.If you go make sure you let us know how it was.

My stew was to die for- and the Biscuits--OMG- I had to stop at one or I would have eaten the whole batch of them- and yeah I added more cheese and added garlic salt to the dough mixture as well- then brushed them with the butter when they came out of the oven!!

The only thing I did different was to put the parsley in the mix, I added more cheese, and 1/4 tsp. Old Bay....as I read in the reviews...next time I will leave the old Bay out, it really didn't do anything for the biscuit....I only ate 1 also...so I have them leftover for breakfast....yummy

I've been in an earthquake once! It was a small one, but it was still scary. I can't imagine being in a big one! I took a Geology telecourse not too long ago, and the North Hills earthquake was featured in one of the episodes. I can definitely understand your fear!
One time when I went to LA, the Unabomber threatened to blow up a plane flying out of LAX, and you guessed it! I needed to fly out of LAX! Our plane was delayed for two hours that time (Rachel and I flew, Art wasn't born yet), and then there's the fear of thinking what if it's your plane?
I'm sure we will be fine. :) And, depending on my mother's mood, we will have a good time, LOL! My mom and I are flying out together. I love her, but she's a mess!

Oh sure, I don't really have a recipe from a book, but this is how I make mine.
CHICKEN SOUP
In a large pot I boil a chicken or chicken pieces, today I just used 2 large chicken breasts, cover them with water, atleast 5-6 cups of water, to that water add whole garlic cloves, as many as you want, 1 tsp. salt and 1/2 tsp. pepper, cook until chicken is thoroughly done, then take chicken out of the broth, put on a plate or bowl and let it cool until you can handle it to shred the chicken. I strain the broth 2x, this removes any bones, froth from the chicken, and makes for a nice clear soup.....then I shred the chicken, add 1 large diced onion, 3 carrots diced, 3 stalks of celery diced, that is the basic soup, I add extras ...today I added 1 small rutabaga diced, 1 small turnip diced, 1 small bok choy diced, 4 ounces of sliced mushrooms, 1 small head of napa cabbage sliced and diced, 1 can of hunts stewed tomatoes including the juice, 1 can of cannelli beans, drained and rinsed, atleast 1/4 cup of parsley, fresh or dried, I also added wolfgang pucks roasted chicken stock to the broth I already had from the chicken, this isn't necessary if you do not add the kitchen sink like I do, lol you can add water/or regular chicken broth if you wish...then you need to taste to adjust the seasonings, usually needs salt...I just tasted some of mine, yummy! and the house smells sooo good!

The lettuce doesn't get soggy(which I know people tend to think happens)and with the cheese melted- it doesn't fall out. Very yummy. My family eats them all up!!

Yes, they are from Hormel, you may have that brand at your grocery store? anyways we never have a Mustard Marinated one, I am using the Mesquite BBQ one, takes about 45 minutes in the oven, they are always melt in your mouth good!

Tonight it is O-U-T to eat at a great Mexican restaurant here in Big Bear Lake, The Sonora Cantina, eveything is $1.00 tonight, they do it for the locals here....can't beat that price! Yummy!!!
That is awesome and you cannot beat AUTHENTIC Mexican food!

Heck, I wish some of ya'll would've invited me for dinner this week! I've had a busy week, so we've been eating whatever's been quick. I am going to make beans today though.

Tonight is leftovers. Thursday is almost always leftover night.
The choices this week are spaghetti, beef and pepper stir fry or bean soup.

lol, Gee, ok you are not into seafood, how about a chicken enchilada? I can do that too....this is a real treat for us, I rarely buy expensive seafood, but just could not pass this one up, it was on sale too...
Dinner was really good last night, and the Margarita was mmmm good too!
