Does anyone have any good recipies for Chicken leg quarters?

I don't cook them very often. When I do I love them baked and brushed with sweet baby ray bbq sauce.I would also serve that with a baked potato since the oven is already on.

You can BBQ them, put salsa (any kind) over them and bake them, make an easy Chicken Cacciatore, cook the chicken in with the sauce, then serve it over pasta....really good! and easy! Hope that helps a bit.

I have done chicken in the oven like that but I really have never cooked with the whole let quarters before. I have a whole package of the leg and thy together. Do you think they will come out okay with them whole or should I cut them and then cook them that way?

Hmmm...that sounds interesting...I have never thought of cooking with salsa like that before. Might be good...I have to see if I have any more salsa left!

You don't have to cut the chicken, unless you want smaller peices, I know sometimes the leg and thigh are pretty big, but it's not necessary to cut it, now I am getting hungry! I am making a pork roast, tiny boneless one that only takes 45 min in the oven with some taters, and probably corn, and maybe a salad....and that cake I made yesterday, I forgot about that! I could of had cake for breakfast, lol

Did you find a recipe yet? I love chicken thighs / legs! Here is my favorite!!

OVEN FRIED CHICKEN

INGREDIENTS
12 chicken thighs
3 eggs
1 cup all-purpose flour
1 cup Italian seasoned bread crumbs
salt and pepper to taste
1 teaspoon paprika
1/2 cup vegetable oil
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish. Add the chicken to the dish and sprinkle with paprika to taste. Bake in the preheated oven for 30 minutes, then turn pieces over and bake for another 30 minutes. Remove from oven and drain on paper towels. Enjoy!
