I had a wonderful slice of homemade butter pecan cake the other day at a small BBQ restaurant. It was absolutely delicious like the rich dense kind your southern grandma would make. I would love to make my own. Anyone have a good recipe for a Butter Pecan Cake? Thanks!

I don't have a tried and true butter pecan cake but.. Heres my Italian cream cake. Its delicious!!

Italian Cream Cake

1/2 cup shortening
1/2 cup margarine
2 cups sugar
5 eggs,separated
2 cups cake flour (I use sifted flour)
1 tsp.baking soda
1/2 tsp. salt
1 cup buttermilk ( I add a little vinegar to milk and make my own)
2 cups coconut
1 cup chopped peacns
1 tsp. vanilla extract

Cream shortening and margerine with sugar; add egg yolks 1 at a time.Mix dry ingrediants,alternately with buttermilk.Stir in coconut,nuts and vanilla.add lightly beaten egg whites. bake in three layers at 350 dg. for 30 - 40 min.

I also bake this in a cake pan for easy serving at family picnics.

Frosting:

1/2 cup softened margerine
1 package powdered sugar ( I believe I use a 16 oz box)
1- 8 ounce package cream cheese
1 cup chopped pecans
1 tsp vanilla extract

Beat until smooth and spread between layers on the top and sides of cake. If you did a sheet cake ice when cool!

This is a crowd pleaser!!
