We went to Gulf Shores in the summer of 2003. Unfortunately, they have had some major hurricane hits since we went and I believe some of the things we did are no longer there. We stayed in Fort Morgan at Gulf Shores Plantation and enjoyed it immensely. You should be aware though that it is several miles outside of Gulf Shores and that there isn't a lot in Fort Morgan like grocery stores, etc. Personally, we kind of like being off the beaten path a bit and liked the less crowded beaches and the quiet. The road to Fort Morgan use to be quite curvy, but they were working on straightening that out some when we went.
As for things to do, check out Fort Morgan (the actual fort) and the aquarium at Dauphin Island. You can take a ferry there from the fort area or drive around the bay. It is an incredibly long drive around and the ferry ride can be fun for kids if they have never been on one before. They even had an evening tour of the fort where they fired a small cannon, told some ghost stories, etc. There's plenty of miniature golf. Also, our local paper said they are going to or have opened a big attraction in the Orange Beach area with dining, shopping, rides, etc. We took a dolphin tour one afternoon on a boat that was fun and we did see dolphins up close and personal and some amazing waterfront houses. They take you out on the Intercoastal Waterway so the water is realtively calm. Also, go see the battleship in Mobile, but be aware that it is a lot of walking with lots of stairs and narrow passageways. There are also a couple of subs docked there to tour all included in the price.
The best place we ate was The Original Oyster House in Gulf Shores. I believe they got leveled by one of the hurricanes and I don't know if they have rebuilt. However, there is also one in Mobile.
I always seek out the local convention and visitors bureau when in a town for lots of coupons on local activities. Gulf Shores is no exception and we saved some bucks on mini golf, the dolphin tour, etc, by doing that.
Have fun!

I forgot to metion two other things. One is that there is a nice factory outlet mall in Foley, just north of Gulf Shores.
Also, be prepared for the rain. That area rivals Seattle for rainfall. We went in the summer an it rained some almost every day. Make sure you have some alternate indoor plans, although the showers are usually short lived.
