THIS WILL BE MY FIRST YEAR TRYING THIS AND WOULD LOVE ANY INFO YOU CAN GIVE ME. I AM PLANNING ON MAKING DIFFERENT TYPE OF JAMS (BLUEBERRY, RASPBERRY, STRAWBERRY AND BLACKBERRY) AND ALSO AM PLANNING ON CANNING SOME DIFFERENT ITEMS. THIS IS THE FIRST YEAR I PLANTED A GARDEN AND I HAVE NO IDEA WHAT I WAS THINKING BUT I AM GOING TO HAVE PEPPER, TOMATOES, SQUASH AND CUKES COMING OUT MY YOU KNOW WHAT.:o ..SO IF YOU HAVE ANY IDEA OR SUGGESTION, I WOULD LOVE TO HEAR FROM YOU. I HAVE NEVER CANNED BEFORE SO WOULD LOVE ANY INFO OR IDEAS YOU MAY HAVE. THANKS EVERYONE.;)

The best thing you can do is get the Ball Blue Book on canning, it is the "Bible" when it comes to home canning. Different foods need different ways to can. You don't want to end up sick because of something ou canned, and alot of canned foods that are not processed right will make you sick......Don't let this scare you it is just a precaution that when you can you have to do it right. Goodluck! Let us know what you make.

I know walmarts,True valu & ace hardware carry it. If there not out. Normally anywhere that sets up a canning display will have this seasons book right in with it.
I wanted to add if your planning on jellies just go get your sure gel. There are several different ways to prepare on the box. Word of advice don't alter your jelly recipes. Sure gel also has a light version.We love it it taste more like jam more fruit than sugar. Jelly is one of the easiest things to make!! If you follow the recipe!! good luck

I DID IT.....:p ...I MADE STRAWBERRY, BLACKBERRY AND RASPBERRY JAMS..THEY CAME OUT GREAT ( I DID SOME WITH SPLENDA AND SOME WITH SUGAR) THEY ALL TASTE GREAT. I DID THE FREEZER JAM AND NOW I HAVE NO ROOM IN MY FREEZER...LOL.. SO EVERYTIME SOMEONE COMES OVER I GIVE THEM SOME..THANKS FOR THE TIP.

Congrats!!!!!! I am so glad it came out so good for you and how nice of you to share it, It sure tastes better than anything in a jar that you buy!

What I do with squash is slice it, then dip in egg, then flour put it on cookie sheets, freeze them, take them off and put in ziplock bags. When your ready to eat them just put in the pan and fry them.:D

How is the canning project going? The veggies I have canned are tomatoes and green beans - both turned out good. I do make blackberry jelly, strawberry jam and muscadine jelly. All my friends love the jelly! I make many jars and give some for Christmas gifts when I need a "little something". Last year I gave each member of my bowling group a jar of jelly and a hand made angel. They loved the jelly! Hope you are experiencing much success.

My favorite things to can are Peach Jam, and corn relish. I prefer the jam, but hubby and his work buddies can never get enough of the corn relish. I put the relish in everything from potato soup to salmon patties. Very versatile. Even great by itself with plain saltine crackers as a snack..

I just received some canning supplies from a local lady on Freecycle. My mom and I are going to take Logan to a U-pick berry farm (well, a few of them if it works out) and I'm going to can the berries so we have them to make fresh jam and berry pies! If anyone has suggestions, let me know, but I've got the Blue Ball Book! Yeah!!

Hello! I just wanted to let you know some things that have helped me with canning. If you have cukes, you could do pickles. The recipe can be found on packages of pickle mixes. You can also look up recipes for canning on line. The other stuff(peppers and tomatoes) can be done individually or use both for salsa. Hope this helps!

I was able to make some sauce :) but after that took a fall and broke my ankle, a few bones in my foot and messed up my achilles tendon :( ....lucky me if it is not one thing its the other..anyway I have to stay off my feet for at least 8 weeks, the only thing the doctor says I can get up for is to go to the bathroom, needless to say my garden will grow, weeds and all, the wild animals will be well feed this year (I am hoping one of my friends will pick my veggies but if not the animals will;) ). Thanks for the tips and I will keep them in mine and try again next year.

one thing about canning you have to make sure everything is sanitized.
make sure you have all the canning tools. the magnetic lid picker upper. jar tongs, pots. new lids flat tops (better seal), the screw lids should still work over and over when canning.
then after you have done all the canning and let the jars cool down. check them to see if the seal on the lids is sealed and did not pop up..
if the jars lids pop up just let cool and stick in fridge, then those will be the ones you eat from first or make pies, cake fillings, etc. if to many tops do not seal make sure to have friends and family that can take them quickly or have a party. there will be a couple that will not seal.
canning can be a pain. best to have help if canning a lot.

so that should help with making sauce, jam, pie fillings, etc.
I also ordered the String Bean Frencher. french style green beans taste so good when I got them in a can. and the kids love them.
takes a week when ordering online. they give the tracking info and you can track your package.
or you can look around locally for a Sauce Master Fruit and Vegetable Strainer something similar to it. where I live the local town is not that big, if they don't sell anything a walmart, target, lowes, home depot, then I have to order online. Since I was ordering seeds, plants and trees, I just ordered the strainer from them.
