ok, so i haven't made pancakes in years right...well, i really wanted some tonite so i just made some and they were delicious!!! but...i was reminded of a pancake problem that i have never been able to remedy...so here's the deal...they never get done in the middle...and i've lowered the temperature down to 3 so they cook slower and i also make them smaller...i'd say about 1/3 the size of a regular pancake...but once again tonite i am staring at a sad plate of oozing pancake middles...
can someone please tell me what in the world i am doing wrong? as i would like to enjoy a pancake in its entirety...:D

Your not cooking them long enough, do not turn them until you see lots of little bubbles around the edges, then carefully check underneath and see if the pancake is browned, if it is turn it over and cook until the other side is browned, Make sure your pan is hot enough too, and add some oil to the pan, even if it is non stick.

Don't make them too thick. Start out with thinner pancakes to see how long they take to cook. We don't like them big and thick anyway...Lots of bubbles then turn is key always...

My Gramma taught me that "you know the griddle's hot enough if a drop of cold water dances on it". If you think it's hot enough, spritz a little water on it, if the droplets skate around it's hot enough. It works! Well, of course it does, Grammas never lie... ;)
