View Full Version : Potato Salad and dedication

I dedicate this recipe to utkd29....
(this is my only recipe and the only one I will ever make...)
[B]Potato Salad
6 medium boiling potatoes-I use Golden, seems they have less starchy texture
----1 and a 1/2 cups of mayo
1 tablespoon of white vinegar
1 tablespoon of yellow mustard
1 teaspoon of salt
1/4 teaspoon of pepper
2 stalks of celery-sliced thin
1/2 a medium onion-chopped
4 hard boiled eggs-3 chopped and 1 sliced for top

Place potatoes in a large pot of cold water, once they boil, boil for about 25 minutes until a fork goes in but not soft.
Let drain in a colander to cool, meanwhile, make the hard boiled eggs and cut the celery & onion.
In a large bowl mix the mayo, vinegar, mustard, salt & pepper...mix it real good...
When the potatoes are cool enough to handle, peel them and cut down into bite size or larger chunks....
Add 1/2 potatoes, 1/2 celery, 1/2 onion and mix...then add the other halfs...
at the end mix in the chopped egg...when you see it looks good, add the sliced egg on top for decoration effect...
Refridgerate for several hours COVERED.
For 46 years I never had the proper measurements, my potato salad was hit or miss, now I am proud to say "I did it" and it no longer $ucks...

This sounds so good! I will have to make some Friday or something. I have been wanting some so badly but the stuff you can buy at the store isn't that good and isn't that cheap either. Thanks for sharing!

yuck to store bought potatoe salads:p homemade IS always better

I really hope you all enjoy this...I did type by hand, no copy & paste stuff
One last note if you like it creamier by all means add just a little more mayo (tablespoonish) but it's supposed to be creamy enough as is...

I made it and it was delicious. I added some chopped sweet and dill pickles and bacon bits. Now I'm off to make our favorite broccoli and cauliflower salad.
Thank you for your potato salad recipe. There can be so many additions to it.

Lori, I am bumping up your recipe, one year ago was the last answer....but it's time for Picnics and eating outdoors again....

I add a few other things to my Potato Salad, like sliced black olives, fried and crumbled crispy bacon, and more eggs. I also add some sugar to the mayo mixture. I'm going to have to make some soon!!

Take away the peppers and celery and add sweet relish about 1/3 cup and you have my tater salad. YUMMY

I always cut up sweet pickles for my potato salad. YUMMY! And the more eggs, the better!:D

My mom puts hard boiled eggs, HELLMAN's mayo, vinegar, celery, onions, garlic powder, onion powder, black pepper and a tee-niney bit of dill into hers....the white vinegar really makes the potato salad. Also, she only uses sweet or Vidalia onions.

I'm on vacation...Lapeer MI...
Hub brought his laptop ...but that doesn't have anything to do with potato salad does it...:-))
