I just know I'll get a lot of great suggestions from this group.
The problem-I am soooo bored with our usual Easter dinner and would like to do something different. The menu always runs like this...
Ham, mashed potatoes, green bean casserole (have to keep that or there will be an uprising), rolls, salad, devilled eggs, some sort of jello-ness. In fact-looks pretty much the same as Christmas Dinner.:eek:
Yikes-can ya'll get me out of this rut?

I'm making the ham, green bean casserole and deviled eggs but not salad or jello anything. I've got a recipe for a"cracker barrel" style potatoes dish and serving cheesecake-store bought for dessert.
Here's the recipe for the potatoes

10.25 oz. can condensed cream of chicken soup
8 oz. Colby cheese-grated (I usually add a little more)
1/2 cup melted butter or margarine
1 sm. onion-minced
1 tsp. salt
1/2 tsp. black pepper
2 lb. bag frozen shredded hash browns-(I thawed mine)

Pre heat oven to 350
Spray a 13" x 9" x 2 " baking dish with non-stick cooking spray and set aside.
In a large bowl combine soup, cheese, butter, onion, salt and pepper.
Gently fold potatoes into the mixture and pour into prepared baking dish.
Bake at 350 for 35-40 minutes, until heated through and top is brownish.
-Serves 8

I'm not cooking big Easter dinner this year for extended family. My husband has to work 12 hour shifts all weekend, my Mom is in a nursing home for physical rehab and I'm working on getting her moved to assisted living, etc., etc. I have too much on my plate already. However, I will fix something special just for my son, husband and I Sunday afternoon. I am making a seafood gratin, roasted new potatoes, fresh, steamed asparagus with a little lemon butter and homemade yeast rolls, plus cheesecake for dessert. It is easy to get into a holiday meal rut. I try to make different things like for Christmas Eve, I make loads of appetizers instead a regular sit down dinner sometimes and for Christmas day I have made beef brisket, pork tenderloins and all sorts of things. One of my fondest memories of Christmas's growing up was that one year when my brother and I were older, my Mom and Dad fixed crab legs and we all had a field day stuffing ourselves with that.

I ended up deciding on an Olive-stuffed roasted leg of lamb, new potatoes and salad. Cheesecake and carrot cake for dessert. Guess that wasn't so hard after all.

Lori-those potatoes sound like a fabulous breakfast-just throw in some sausage or ham!

we keep Easter Sunday meal simple. We do bake a ham and serve homemade potato salad chips dip and several breads and cheeses for sandwiches.

I don't like to get stressed holidays should be relaxing for everyone!!

I do agree that the holidays are for everyone, but I greatly enjoy cooking and seeing my family and friends enjoy a delicious meal.
