We're thinking of hosting a UFC fight night at our house and was wondering if anyone had some good recipes for finger foods, or comfort foods, or easy prep gathering foods. The Superbowl's this weekend too and we may have people over for that too - so dip recipes, chicken wing recipes (hot or sweet), steak marinades, suggestions for sneaking something healthy in :) or the like anyone?

For the past two, I've had to take naps that day - why do they start it at 10pm EST?! ;) The past few we've been to have had great food - one Mexican style with tacos, tamales, chips, layred dips, and another was steaks and chicken on the grill. Chicken wings are always a great idea - anyone ever make them in a crockpot?

Rotel Dip: There are a ton of different ways to make it. Here's one!
Ingredients1 can (10 oz each) Ro*Tel Original Diced Tomatoes & Green Chilies, drained, reserve liquid
1 can (16 oz each) Rosarita Traditional Refried Beans
1 container (12 oz each) refrigerated guacamole
1 container (16 oz each) sour cream
1 envelope (1-1/4 oz each) taco seasoning blend
1 cup shredded Cheddar and Monterey Jack cheese blend
1 can (4.25 oz each) sliced ripe olives, drained
1/4 cup sliced green onions
Tortilla chips, optional
DirectionsReserve 1/2 cup drained tomatoes, set aside. Blend remaining tomatoes and reserved juices with beans in small bowl.
Spread bean-tomato mixture into 8x8-inch baking dish or round casserole dish. Top with guacamole.
Blend sour cream and taco seasoning mix together in small bowl. Spread over guacamole. Top evenly with layers of cheese, olives, green onions and reserved tomatoes. Chill for 2 hours prior to serving. Serve with tortilla chips.

Rotel Dip:
Here is another variation. There are a ton of different ways to make it.
Ingredients
velveta
rotel
italian sausage
tortilla chips
Directions
brown italian sausage
drain sausage and place in crockpot
cut up one log of velveta and place in crockpot
add one can of rotel
cover and cook on low for 2 to 2 and 1/2 hours
stir occasionally until cheese is melted
serve with tortilla chips
I normally just make mine with rotel and velveeta. I am not a fan of ground beef. I use a crockpot and it is always gone when the party is over.

They do it to annoy people,LOL seriously though i guess the part that bugs me is the main event takes forever!I usually doze off till main fight time:p I can;t wait to see how Brook Lesner does,he came from wrestling so this should be interesting!

The easiest thing I ever make for party food are the c o c ktail sausages in a crockpot. This sounds gross but is actually very good. Just throw 2 packs of the c o c ktail sausages and a large jar of grape jelly in a crock pot. Cook on high long enough for the sausage to be done and then just keep on warm:)

You should try the jelly. It is very good. It sounds strange but once you eat them you will be hooked! I put bbq sauce with it too:)

YAWN!!! Thanks for all the notes on gameday/special event foods!
Saturday for UFC (which was again, a disappointment - so much hype - and then less than a minute into it!) we had steaks - ribeye and tbones on the grill along with bbq basted chicken tenders and for the sides, corn, roasted red potatoes and fresh green beans. There were also finger pickings like cheese and crackers, deviled eggs, and chips and Rotel dip! Yum. Oh, and plenty of beer of course!
Yesterday for the superbowl, I was super tired from the late UFC fight night and had a bridal shower to go to, so I ended up picking up bbq from a local place that slow smokes the ribs! So, ribs, chicken, fries, bbq beans, GREAT mac and cheese and the best cornbread I've ever tasted. That made it real easy to sit back and enjoy the game. I picked up the bbq around 4, kept it warm in our warming drawer in our range (love that drawer! - that was the first time I've really used it since getting the new range about 6 months ago - it kept the food a perfect temp for 2 hours without drying it out!). We also had chocolate chip cookies, chips and french onion dip and homemade carmel corn (thanks mom!) :) Oh, and more and more of beer!
Whew - what a weekend! And what a surprise 4th quarter last night!
