So my in-laws (and Albert's siblings) are coming to our house for Christmas this year. My house is already decorated and ready to go, BUT
What should I serve for dinner?

I am making Ham, Yams, Mashed Potatoes, Corn (Of course, lol) Broccoli, Baked Beans, Cranberry Fluff that I make...so good, and a Salad....

Well kinda....they could eat beans and tortillas everyday, but mole is just gross. Albert's mom made it for me once and I almost puked when I saw the ingredients. She made it from scratch and did not use the canned sauce.

It is our tradition to have Mexican food on Christmas. I make home made chicken enchiladas, my Daniel makes his Yummo!! Guac-we also have 7 layer mexican bean dip- salsa too and then for dessert I make home made fried ice cream-cinnamon/honey too!!!!!
If more people come I usually make up tacos and burros also!!

This will be the first year since my husband and I got married that I will not have a houseful of people to cook for for Christmas. Last year, I had 16 people at my house to cook for. Plus, I also cook for whoever is working at the EMA station closest to our house so that adds 2 more people. I made an individual cornish hen for everyone. I also had stuffing, shrimp stuffed twice baked potatoes, macaroni and cheese(hubby's favorite), green bean casserole, broccoli salad, squash, peas and onions, homemade cranberry sauce, a bunch of different appetizers, and a few more things (can't remember everything at the moment). The year before that, I made a crown roast with a tart cherry and apple stuffing. I also made bracciole that year so my husband's family could try something new. I don't remember what sides I made that year. Normally on Christmas, I watch my kids open presents and then I am in the kitchen all day. I enjoy the company, but I am looking forward to a more relaxed day this year since it will just be the four of us. I'm still not sure what I'm cooking this year though. I'm leaning towards a ham though since it's so simple to do.

It will be about 10 of us. I thinking I will make a ham and people are bringing potluck. I will make mashed potatoes, green beans, corn, rolls, etc.
I am not a fan of cooking for a large group.:(

I cook up chicken, red onion, green chilis and chipoltle seasoning, salt and pepper- let it cool- then put it into my food processor to chop it all up- in another bowl I mix together cream of chicken soup with more green chilis and chipoltle with sour cream and a tad bit of milk to thin it out some. I lay out flour tortillas and add the chicken mixture- cream sauce and shredded cheese- fold up and lay in a 13x9x2 pan and when filled I cover with remaining cream sauce and shredded cheese and bake for 20-30 mins.

YUMMY! My recipe is very simple and takes about 20 minutes to prepare.

this doesn't take too long either- prep and cook time together maybe 45 min to an hour total. They are soooooo goooood!!

We're all invited to my nephew's home on Sunday. It's family tradition to split holidays so everyone's not eating 2 humongous meals on one day. "Inlaws" (those who started life in the family) have the holiday on the "eve" or the weekend before the holiday, "Outlaws" (those lucky enough to have married into the family) have the holiday. Next year, it swaps. Anyway, my nephew bought my Mom's home after she moved into a retirement community. He'll be deep-frying a turkey, his wife (my niece-by-love)(I love her so, she's so sweet...just like me!(lol)) will make mashed potatoes & green bean casserole. Everyone who's coming will bring a couple of dishes to pass and their beverage of choice, so nobody has to lay out lotsa money for soda etc. I've been asked to bring a dessert & an appetizer. I'm bringing cream cheese pound cake & smooshed berries, and cold sliced meatloaf (the kind my Mom used to make)(she's 85, she deserves not to have to cook anymore). The meatloaf is a family favorite & a long-standing Christmas tradition as an appetizer.
Ok, now I'm hungry...

That sounds really nice. Christmas Eve for me is just, lots of crackers and dips, Broccoli salad, chips, lunch meat.... Christmas Day on the other hand is, shrimp, crab cakes, oysters.
Mac Salad isn't odd. We have it at EVERYTHING!!!:o

Albert's sister is coming over on Christmas Eve to help me make pies.
I have never cooked a ham before so I am really nervous!

Brandy you cannot mess up making a ham, 99% of the ones you find will be already cooked, so you can eat them room temperature or bake them, it's up to you, most of the ones you find will have water added to them, so it is not necessary to add anything to the pan, if you want to put some Pineapple slices, Cloves, and Brown Sugar on the Ham you can or you can use Orange Juice and Brown Sugar.....really good!! I cover the Ham to keep the moisture in and depending on the size I cook it for atleast 1 1/2 hours at 350 degrees, then just slice and enjoy, I usually buy a Farmer John Ham, which I think you can get in NM?? If you buy a spiral sliced Ham read the instructions that come with it carefully, spiral sliced Hams tend to dry out if you cook too long...I prefer to buy the butt portion of the Ham, it has more meat on it, goodluck, you will be fine!

Cheat and get one from Honey Baked Hams! They are kinda pricey, but they taste so good. And you don't even have to cook them at all. You just leave it out at room temperature to warm up some before serving.
When I make ham myself, I use brown sugar and coca-cola. The brown sugar and the coke kinda caramelize in the pan and make a really yummy "sauce" for the ham to sit in. It helps keep the ham moist too.

Yeah, I never use to cover my hams but then the last time I made one I decided to try it, and it was so much better, really moist and yummy, right now they are on sale for a good price, here they are 89 cents a pound.
GeorgiaMom's idea with the Coke is good too, you will never know it has coke in it....When I make Carnitas I add Pepsi,...that reminds me, I haven't made that for quite a while...lol

What a wonderful idea! I am going to do that, by golly.
We are having ham, sweet potato casserole, mashed potatoes, green bean casserole, and rolls. I will make our dessert the day before. Not sure what it'll be yet. I will be cooking just for us. :(

Well, I will not be cooking a ham in the crockpot. Yesterday, we received a Hamlet smoked turkey my sis had sent to us. :) So, we will be having:
Turkey
Sweet potato casserole

I need to give you my pumpkin pie recipe--even people that hate pumpkin pie seem to like it!!
Every year I make a Triple Chocolate Mint Cake that is awesome, but I don't know about it this year(I haven't done anything that I normally do:( )......It is sooo good!!! The size of a regular round cake, but weighs about 10 pounds:eek: !!

I used to make a mixed berry pie that everyone loved and it was so simple. I used frozen blackberries, raspberries, and sometimes I put strawberries in too. All you have to do is mix the berries with some sugar, put into pie crust, cover with top crust, and bake. So easy and so yummy!!!!!! Now that I'm thinking about it, I may do that this year instead of the cheesecake I normally make....

I certainly will!! but it may not be in time for Christmas! It is packed up with my Christmas things and I didn't get much of anything out this year. Of course if I make it I'm gonna have to find it!!! It has a lot of ingredients and a little harder to make than the average cake but oh so worth it!!! My kids like it too!! I will get it to you!!

I made a turkey with stuffing, ham, mashed potatoes, gravy, dinner rolls, fresh steamed broccoli, cauliflower, and baby carrots. Served it with champagne, ice tea, or soda. For dessert: homemade bon-bons, rocky road, fudge, or candy cane cookies.
